Eén globale margedrempel werkt niet voor restaurants. Een cocktail aan 75% marge en een steak aan 55% marge kunnen niet aan dezelfde standaard gehouden worden. Cilurzo Hospitality lost dit op met per-categorie margedrempels.
Het foodcost_categorie_drempels systeem
In plaats van één globale drempel, stelt u verschillende minimum-marges in per categorie:
- Dranken — 55% minimum marge (dranken hebben natuurlijk hogere marges)
- Luxe-items — 50% minimum marge (premium-producten met lagere doorloop)
- Voedsel — 68% minimum marge (standaard voedselitems)
- Desserts — 60% minimum marge (lagere foodcost maar arbeidsintensief)
Deze worden opgeslagen in de foodcost_categorie_drempels database-tabel en kunnen op elk moment aangepast worden.
Automatische rode-badge flagging
Gerechten onder hun categorie-drempel worden onmiddellijk gemarkeerd met een rode badge op het dashboard. U ziet in één oogopslag welke gerechten aandacht nodig hebben — niet begraven in een rapport, maar direct op het hoofdoverzicht. De categorie-header toont de gemiddelde marge, zodat u kan zien of een hele categorie underperformt.
Inline drempel-bewerking
Een drempel aanpassen? Geen aparte instellingenpagina nodig. U kan drempels direct bewerken in de Category Thresholds tab van het dashboard. Wijzig het getal, sla op, en alle recepten in die categorie worden onmiddellijk her-gevalueerd.
Waarom één globale drempel niet werkt
Stel u voor dat u een 65% margedrempel instelt voor alles. Uw dranken zouden constant rood geflagd worden (ze staan boven 70%, dus prima) terwijl uw steaks altijd geflagd zouden worden (ze staan op 55%, natuurlijk). U zou ofwel de flags negeren of steaks-prijzen verhogen tot een onredelijk niveau. Per-categorie drempels respecteren de economische realiteit van verschillende productgroepen.
Gesuggereerde categorieën uit bestaande recepten
Wanneer u een nieuwe categorie-drempel aanmaakt, suggereert het systeem categorieën die al in gebruik zijn in uw recepten. U hoeft niet te gokken welke categorieën u nodig heeft — het systeem kent uw menu en helpt u organiseren.
Het resultaat: gerichte kostprijscontrole
Met per-categorie drempels wordt uw kostprijscontrole chirurgisch, niet algemeen. U focus op gerechten die echt underperformen voor hun categorie, niet op gerechten die natuurlijk lager-marge zijn.

The foodcost_categorie_drempels system
Instead of one global threshold, you set different minimum margins for each category:
- Drinks — 55% minimum margin (beverages naturally have higher margins)
- Luxury Items — 50% minimum margin (premium products with lower turnover)
- Food — 68% minimum margin (standard food items)
- Desserts — 60% minimum margin (lower food cost but labor-intensive)
These are stored in the foodcost_categorie_drempels database table and can be adjusted at any time.
Automatic red badge flagging
Dishes below their category’s threshold are instantly marked with a red badge on the dashboard. You see at a glance which dishes need attention — not buried in a report, but right on the main view. The category header shows the average margin, so you can see if an entire category is underperforming.
Inline threshold editing
Need to adjust a threshold? No need for a separate settings page. You can edit thresholds directly in the Category Thresholds tab of the dashboard. Change the number, hit save, and all recipes in that category are re-evaluated instantly.
Why one global threshold doesn’t work
Imagine setting a 65% margin threshold for everything. Your drinks would be flagged red constantly (they’re above 70%, so fine) while your steaks would always be flagged (they’re at 55%, naturally). You’d either ignore the flags or raise steak prices to an unreasonable level. Per-category thresholds respect the economic reality of different product groups.
Suggested categories from existing recipes
When you create a new category threshold, the system suggests categories that are already in use in your recipes. You don’t have to guess what categories you need — the system knows your menu and helps you organize it.
